CHALET DES ÎLES
Bois de Boulogne - 75016 Paris
The original chalet had to be reinterpreted, with a new conception of gardens and terraces around a vegetable garden, and new ways of cooking with local and French producers, adapting to the rhythm of the seasons. Chef Pierre Chomet is in charge of the chalet's new kitchens.
In 2024, the chalet was completely redesigned by architect Nicolas Laisné to harmonize and reconcile the facades with its history. Wood, a natural, low-carbon material, was chosen to reinterpret the premises.
Since 2014 the Chalet has been committed to developing its social and environmental responsibility to the maximum. As a result, strong partnerships have been forged with players such as Moulinot (bio-waste collection), Surfrider Initiative Océanes (mobilization of teams and customers for waste collection), Smoky (cigarette butt recycling).
Since 2019, lost glass has been replaced by returnable glass with our partner Danone (over 50,000 bottles per year).

Chef Pierre Chomet signs the menu for the chalet's new kitchens, alongside Nabil Mahir, the Chalet's executive chef for over 10 years.
They offer a multi-faceted, authentic and eco-responsible catering experience: a short supply circuit, autonomous waste management and a commitment to sourcing over 90% of our products from France.
Today, the re-opening of the Chalet is aimed at obtaining Ecotable and Iso 14001 certification and signing the Paris Action Climat charter.
