The plate is a blank canvas on which Pierre Chomet allows himself every combination and every bold move—without being provocative—all in the service of flavor. His cuisine is playful, precise, and full of life. Together with Executive Chef Nabil Mahir, Pierre Chomet takes the helm of the kitchens at Chalet des Îles.

I love the fact that it's made of wood, surrounded by a garden and vegetable patch, and blends in perfectly with its surroundings... It's these multiple facets that I wanted to highlight through the different dishes I'll be offering this year, respecting nature and the rhythm of the seasons, of course."
